  • Vinification:the grapes are hand-harvested and transported to the winery in small 20kg crates. Careful hand-selection of the cluster is carried out before pressing. The stainless wine vats are filled by gravity alone, without using mechanical pumps. Alcoholic fermentation lasts for 18 days at a temperature of 28°C.
  • Aging:after malolactic fermentation, the Brunello di Montalcino is transferred to French oak barriques (20% new, 80% second and third passage). Wood aging lasts for two years, as laid down by the Brunello regulations. The full maturation of this complex wine requires further bottle aging for at least 24 months before its release on the market.
