For Avignonesi, the pursuit of excellence goes hand in hand with the experimentation of 100% Tuscan vinification processes. The intention is to allow the habitat to prevail over external influences. For this particular wine, Avignonesi has set aside steel and oak for Tuscan clay. The name Da-Di, Chinese term for "earth, soil", was chosen to emphasize this particularity.

  • Vinification:Da-Di is vinified in 12 earthenware amphorae made in Tuscany - 6 have been manufactured by Artenova in Impruneta and 6 were manufactured by the San Rocco Laboratory in Torrita di Siena using clay from Monte Amiata. This wine is composed of one third of whole bunches and two thirds of whole berries. There fermentation takes place with indigenous yeast, followed by a daily program of manual reassembly.

  • Flavour:The clay gives this Sangiovese 100% a vibrant taste of red fruit without frills. Da-Di is full of the freshness and elegance typical of amphora. Medium body, elegant structure and berries and cherries make the mouth water and stimulate the senses, giving way to a soft and spicy finish.
