  • Vinification:the grapes are hand-harvested and transported to the winery in small 20kg crates. Careful hand selection of the cluster is carried out before pressing. The stainless wine vats are filled by gravity alone, without resorting to mechanical pumps. Alcoholic fermentation lasts for 15 days at a temperature of 28 C°.
  • Aging:Maturation and aging: after the malolactic fermentation, the Rosso di Montalcino is transferred to French oak barriques (20% new, 80% second, third and fourth passage) where it ages for 6 months. Before being released on the market, the wine bottle-ages for a further period of 6 months.
